Co-op Expansion. University Co-op Expands: Renovations Underway as Iconic Store Grows into New Space

Hey everyone, it's Saturday lunchtime, June 28th, 12:20. This is Gary. I'm over in the university coop out on the drag, and as you can see by the, Temporary wall here, something is cooking over at the university co op. Let's go outside and I'll tell you what's going on. University co op has been a mainstay of life on the 40 acres for many years, and now they are expanding this location Into the property next door. Uh, you may recall this used to be Foxtrot. Foxtrot was a coffee shop, a little artisan grocery store, uh, part of a chain which very abruptly went out of business about a year ago, uh, April 2024, I believe, um. And as you can see, the construction guys are just completing the finish out now. Papers up in the window, so we can't really take a peek inside, but of course here's the iconic 23rd Street mural, just so you can get your bearings. Let's see if we can just get a little peek in the door here just to see what We can look forward to with the expanded university co op. Talking to the folks inside, The timeline is now just a few weeks. Uh, certainly should be ready by August and will absolutely be in business, when school starts up again for the fall semester.
